Creating an LLC for new 1099 work?

I apologize for beating a dead horse here, I tried searching for answers from previous threads but maybe I'm just not understanding it clearly. Basically, I'm going to be a 1099 employee for the first time this year (skydive plane pilot, Utah USA). I've heard of people starting LLC's to claim mileage driven, food, etc. to help reduce taxes.

I need to know if it's truly worth it to pay for and start an LLC, and what I need to start keeping track of for next years tax season. I've never been anything except a W-2 so all of this is very new to me.
